they generally dont experiment that much with new IPs but the change in mechanics and gameplay makes their games different and feel fresh, and it mostly works.

For instance Zelda switch from corridor/dungeon 3d linear games to fully open world with crafting mechanics.

Kirby went full 3d which allowed for the mouthfull mechanic to shine.

Donkey Kong Bananja was relying on desctructubility mechanic (even having the most diverse set of movement in the series)

Bowser’s fury tried open world Mario (you could free roam the map and chose your next island to visit)

its not like the company does not experiment though.

During the nintendo switch generation we saw the releases of Mario Kart live, ring fit adventure, arms, nintendo labo for instance.
